A nice Orange Cake - 1kg of it.
Oven on at 180C
Line a 1kg loaf tin with baking parchment and butter it well, to stick it to the tin.
Make a Cardamon Infused Orange Juice
8 cardamon pods bashed, husks out and ground up in pestle and mortar.
2 tsp honey, 2 small oranges zested plus the juice of one of them in a small pan and heat until just simmering. It should taste of cardamon
Make the Batter
Weigh four eggs shells on, shell them and add the same weight of: self raising flour butter cut into small cubes Demerara sugar and a pinch of salt in a mixer and whiz up until you have a batter, don't over mix but get all the lumps out. It will go light brown when it's ready.
Loosen the batter with cardamon infused orange juice you made before
Spoon into the tin and bake for 35-40 mins until a skewer comes out clean or you can hear the crackle. I often find it takes longer than this.
While the cake is baking make the Syrup.
Syrup
Juice and zest of 2 small oranges.
6 cardamon pods bashed.
2tsp honey.
3-4 tbsp orange curd but you can usually only find lemon, so that will have to do.
Add all these into a pan and simmer for 4 mins. strain out the pods
When the cake comes out the oven prick all over with a skewer and then put the syrup into the holes. All of it, that is what makes it great.
Let it cool and then eat it.
