Aloo Gobi with Coconut

Shouldn't work but does. This was an attempt to make a better aloo gobi and it comes out richer and sweeter and is all the better for it.

1 big onion diced small and sautéed off in Veg Oil

Meanwhile chop up two big potatoes into a 12mm dice and microwave for 10 minutes

Break up a cauliflower into small florets and add to the onion after 5 minutes of onion frying

A big lump of ginger and one hot or two less hot chillies should  be chopped or mushed into a paste or thereabouts and they need to go in with the caulli and onion. let that all fry on a medium heat for another 5 mins or so add in 2 or 3 cloves of garlic minced up  half way though. 

them add in:

1tsp veg bouillon and a pinch of salt to taste

1tsp gram masala 

2 tsp ground coriander 

1tsp mustard seeds 

a dash of asetofeida 

1 tsp turmeric

1tsp cumin seeds

a tin of coconut milk 

juice of half a lemon 

1 1/2 tsp brown sugar and a little water if it seems really thick.

Let it cook down for another 10 minutes and eat it with rice.
